Ingredients
- 2 cups kosher salt
- ¼ cup cracked peppercorn
- 2 TBSP fresh chopped rosemary
- ⅓ cup water
- 1 Prime Rib Roast from Herd 77
Directions
- Preheat oven to 450 and coat a 9x13 baking dish with nonstick cooking spray
- Combine all dry ingredients and mix then slowly add water into the bowl until it becomes a paste consistency
- Pat your prime rib roast as dry as possible with a paper towel
- Place prime rib bone side down in the baking dish
- Gently apply your salt mixture to the prime rib coating the entire face up side about ¼ of an inch thick
- Place the seasoned prime rib in the oven and immediately reduce the temperature to 325 degrees
- Allow the prime rib to roast until a meat thermometer reads 135 degrees (medium rare)
- Cook time is around 2 hours depending on the size of the prime rib roast
- Remove the roast from the oven and allow it to rest under tin foil for 10- 15 minutes
- Lastly, remove the hardened salt crust altogether from the roast before serving, and ENJOY
Secret Tip:
For extra flavor add a touch of additional seasoning to the prime rib once it's been patted dry, try a course steak seasoning like Montreal, but remember you are adding a TON of salt to this meat so be sure to avoid rubs containing high volumes of salt.
