On May 5, 1862, an outnumbered and poorly equipped Mexican army, led by General Ignacio Zaragoza, achieved a remarkable victory over the French forces at the Battle of Puebla. Although the French would eventually occupy Mexico City and install Emperor Maximilian, the Battle of Puebla became a symbol of Mexican unity, pride, and resistance against foreign intervention.

Classic Beef Fajitas
Ingredients:
- 1 ½ pounds of skirt steak or flank steak, thinly sliced
- 2 bell peppers (red, green, or yellow), thinly sliced
- 1 large onion, thinly sliced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- Juice of 2 limes
- 2 tablespoons of soy sauce
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Warm tortillas, for serving
- Optional toppings: guacamole, sour cream, salsa, shredded cheese, chopped cilantro
Instructions:
- In a bowl, combine the olive oil, lime juice, soy sauce, minced garlic, cumin, chili powder, salt, and pepper to create the marinade.
- Place the thinly sliced beef in a shallow dish or resealable plastic bag. Pour the marinade over the beef, ensuring it is evenly coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor.
- Heat a skillet or grill pan over medium-high heat. Add the marinated beef slices and cook for 3-4 minutes per side, or until cooked to your desired level of doneness. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and onions. Cook until they are tender and slightly caramelized, about 5-7 minutes.
- Return the cooked beef to the skillet and toss with the peppers and onions to combine.
- Serve the beef fajita mixture warm with warm tortillas and your favorite toppings.
Spicy Chipotle Beef Fajitas
Ingredients:
- 1 ½ pounds of beef sirloin, thinly sliced
- 2 chipotle peppers in adobo sauce, minced
- 2 tablespoons of adobo sauce (from the chipotle pepper can)
- 2 tablespoons of olive oil
- Juice of 1 lime
- 2 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- Warm tortillas, for serving
- Optional toppings: sliced avocado, pickled jalapeños, diced tomatoes, chopped cilantro

- In a bowl, combine the minced chipotle peppers, adobo sauce, olive oil, lime juice, minced garlic, cumin, smoked paprika, salt, and pepper to create the marinade.
