A firm but tender cut, providing rich full-bodied flavor from its marbling throughout. The NY strip is less fussy than a Ribeye, yet more flavorful than filet, it is a memorable cut for a shared meal.
Cooking Notes: Option one, a NY Strip can be cooked a bit slower on a pellet grill, or smoker, till med rare, followed by a quick sear in a skillet over high heat. Secondly, we recommend seasoning with coarse Kosher salt, and fresh ground black pepper, and grilled over direct high heat for a nice char on the outside and pink middle. Watch for flare-ups since this cut of meat has more fat.
