Many know Filet Mignon to be one of the most coveted cuts. It comes from the Tenderloin, which is the most tender cut, but also the most rare. To explain, it is the most limited cut available. The Filet is very lean, but both buttery and mild in flavor compared to other cuts of meat.
Cooking Notes: Season with coarse Kosher salt, and fresh ground black pepper. Low-fat steak so best on a cast iron skillet on the stovetop - if cooked on a grill should rub oil on steak with seasoning before grilling. When possible, season meat the day prior and refrigerate uncovered creating a more tender and flavorful piece of meat.
